Enormous PattyPan

My wife is out on the East end of Long Island and claims to have just purchased pattypan squash about 8 INCHES in diameter.

I've never seen any but the bite-size ones, which I'd steam or sautee briefly, maybe parboil.

Would anyone have any special/specific handling instructions for such monstrous ones?
