Enchiladas Suizas, help needed

This is one of my favorite dishes served at Mexican restaurants around here (suburban NYC). I've tried to make it several times at home but it's never better than OK. I want to try again today. I don't want to make my own green salsa. I use store bought. I currently have Herdez brand Salsa Verde on hand but I'm going grocery shopping before I make this dish so I can buy another brand if there is a big difference. My problem is with the filling. I use shredded cooked chicken, either breasts or thighs. Today I have gently cooked breasts. I add a little salsa, some jack cheese, some sour cream, cilantro if I have it on hand and spices to the chicken mix but it's not great. How can I improve my filling? Thanks
