Recently went to Emma's in Kendall Square again - the pizzas are still excellent and the primary reason to go there for me, however, the Spring Fling salad is also pretty addictive - spinach, very tasty feta cheese, Granny Smith apples, roasted almond slivers and the "Secret" dressing.
I order this salad every single time we go there - can anyone provide more information on its origins and/or a recipe to replicate this dressing at home? It's a sweet-tart viniagrette - I am trying to figure out what oil, what vinegar, mustard type, and the source of its sweetness (thinking maple syrup, maybe?), along with the proportions and other ingredients. I can't seem to get it right at home. Thanks.
PS - The guacamole is shockingly good there as well - but I don't love the flatbread (wheat-based, not that crispy) chips that come with it vs. corn chips.
