Went to EMP last night - sort of disappointing. The appetizer I ordered was great - it was a butternut squash flan served with roasted brussel sprouts and black trumpet mushrooms, floating in a mustardy broth. Very good - nice mix of flavors and textures. Unfortunately, things went downhill after that. The scallops were chewy and sort of grainy - almost sandy. The flavor was almost nonexistent and couldn't even be saved by the foie gras sauce it was served with. The arctic char was quite oily and unexceptional. Sometimes less is more - in this case, less was less. Good to know for next time.
