In search of grassfed beef soup bones, a friend pointed me to Electric City Butcher in Santa Ana, said to be Orange County's only whole animal butcher. I stopped by last week, and indeed, the suppliers include sustainable ranches raising animals humanely that I know and buy from in Northern California --- Stemple Creek, Liberty Duck, Devil's Gulch.
Owner Michael Puglisi greeted me and waited on me himself. Meats are cut to order here. Grassfed, organic Stemple Creek beef bones cut from the knuckle, shank and neck are $4 per pound. I bought six pounds of these to fill an 8-quart pressure cooker, plus oxtails ($10 per pound) to stew and center cut marrow bones ($9 per pound) to roast for an appetizer. All were high quality. The neck bones were particularly meaty and contributed a lot of flavor to the brew. One ding though is that I had asked for the shank bone to be cut into sections and that did not happen. I also tried a couple slices of the delicious coppa di testa and can recommend that too.
