When I worked in downtown LA during the 70s through the 90s, my friends and I frequented El Rancho on 5th Street (actually it was originally on Hill Street, and moved to 5th when a new jewelry district building took over the block). I loved the cheese enchiladas that were sauced with gravy from their red chile beef stew. The restaurant closed a few years back. Does anyone have the red chile recipe? My other favorite dish was the green chile burrito, but I can make decent green chile stew to satisfy that craving.
