Eggy tasting cheesecake.

I tried to bake a pumpkin cheesecake for the first time. (It was also my first time making cheesecake period). I followed the recipie exactly, used a water bath and the one egg per 8oz cream cheese rule and it came out really, really, REALLY, eggy tasting. How do I fix this and why does there need to be eggs in the first place?
