"Eggs and Mash" ... Cracking an egg into your mashed potatoes?

Anyone else do this?

I did it last night and I must admit, it was quite good.

I had a bowl of leftover mashed potatoes in the fridge, and while they are no doubt good on their own, I sort of wanted to make a meal out of them.

So, being the lazy ass that I am, I dropped in a dollop of Greek yogurt and a bit of milk to loosen it up, then mixed, and zapped the bowl of mashed potatoes in the microwave for a few turns to make sure it was evenly heated and piping hot throughout. Hot enough where you could see steam sort of coming out if you strained enough with tri-focals.

Then, using the back of a spoon, molded a little hole in the middle of the mashed potatoes, and working quickly before the temp dropped too much, cracked an egg into the hole, then covered the whole thing for about 5 minutes, and voila ... "Eggs and Mash!"

Garnished the bowl with a good sprinkling of sea salt and some horseradish powder and, thank goodness I was chowing alone, because I ended up putting tongue to bowl as a denouement to my Mashers and Egg experience.
