I know it is too hot for this dish and our humidity is at 97% but the air conditioning is working fine and I'm in the mood for it.
My question is whether to salt and drain or not. I have pulled out my stack of Italian cookbooks, one says peel and slice paper thin salt and fry without flour or breading. Essentials says salt and flour. Well's Trattoria say don't salt and don't peel and also says it is very wet and use a slotted spoon to serve, also no breading or flour.
This is not something I make a lot, any opinions or favorite recipes?
