my wife and daughter are anti-whole eggs and I make them egg white omelettes every morning. i am using a calphalon non-stick pan and a little evoo to sautee onions, peppers and shrooms. then the egg whites go in. i find that sometimes the whites have a tendency to stick to the pan making the "flip" difficult if not impossible. sometimes they get scrambled whites w veggies. they don't mind but it pisses me off that i can't do it perfect every time.
Anybody else have this problem? Anybody have and solve this problem? Am I doing something wrong?
