I have tasted several version of the dish. Some Chinese American versions and some Chinese Indonesian version.
The Chinese Indonesian version has even brown colour omelette. It has crab meat and maybe some shredded veggies mixed in. And I think it has some starchy ingredient mixed in the omelette. But they really make it delicious. The sauce is thick, red in colour and slightly sweet. I have not tasted a good one in Bay Area yet.
The Chinese American version is similar. Although I don't think they used any starch ingredient in the omelette. The sauce is usually brown and a bit salty but not sweet. The best I have tasted is at the restaurant close to my home in Hayward. Thay also make it very delicious.
Anybody else like this dish ?
