Educate me on fish and chips

I was in London I ordered fish and chips. Normally at home I would never order something like that (too fattening) but I was on vacation :)

The fish and chip we had was delicious in my mind. But I don't have anything as a reference, I don't know if what we had was authentic fish and chips or not... What we had was a white fish battered in a very thick and crunchy coating. I don't think it was cornmeal based, rather just regular flour. It was super crunchy and not oily at all. It came with what looked like fat fries to me. Square cut, thick and potatoy in the middle and crunchy on the outside.

The bottle malt vingar they had tasted like apple cider vingar, not strong enough for my taste. I rather liked just dipping it in catsup. The resturant was called Shakspear. The bus tour people told us it serves one of the best fish and chips in London.

Now can you tell me what fish and chips suppose to taste like? And if you've been to London and had Shakespear's fish and chips, were they authentic?
