I haven't been to Echigo for the lunch special in about 6 months, but it was pretty bad today for the following reasons:
a) i think all the lunch special fish was pre-cut earlier that day, which takes away from the freshness.
b) the fish to rice ratio was abysmal. i don't need gigantic slices of fish (in fact, i prefer it more proportional), but it seemed like i was eating gigantic blobs of rice with really thin and narrow slices of fish on top. Even the blue crab handroll seemed like 90% rice, 10% fish.
anyway, echigo's lunch special was never known for its generous cuts (at $10, now $11, what do you expect), but between pre-cutting and loading you up with rice, it's getting closer to buffet-quality.
I probably won't return for lunch unless I'm getting omakase (and we'll see how that is).
