I've had this sensation at least twice now when I've eaten something fairly normal that is sooooo good, it's like eating it for the very first time. Who knew it could be THAT delicious? Or amazing?
Probably the first time I had this sensation was eating shrimp (blanca de huelva) at a marisqueria in Madrid. Had I ever eaten shrimp before? I thought I had! But this was simply grilled and had so much flavor. What have I been eating all these years that looked and tasted like weak imitations?
A second time was buying a small plastic bag of Pruneaux d'Agen from a gourmet market. I had long heard of these famous prunes from the far southwest of France, but I always figured there's no reson to spend five bucks (or more) on a small sack of prunes. What's the big deal?
Well. they are a big deal. Intense, rich flavor. Very wet and sloppy and gooey and delicious.
I got to wondering what other experiences folks have had that truly seemed like a discovery - like "you suddenly turned a blinding light on something that had always been half in shadow."
