It had been quite a while since I navigated a whole fish for dinner. In this case, it was at a popular Italian restaurant called Mamma Francesca in New Rochelle, N.Y. It was a large Branzino, with just a light marinara sauce ladled over it from head to tail, some pizza oven bread, small salad, and small order of rigatoni on the side. I mustered my patience level and ate that fish in about 45 minutes laying the bones carefully on the side. It was a delicious indulgence. I forgot how good a whole fresh fish can be, the sweet meat, the juices. Mom and Dad would have been proud of me. I learned at a very young age...
