I got these rolls (see photo) from my local Vietnamese market, first time I've ever seen them. They are roll-ups, rice paper and bits of dried shrimp. If I eat them straight or with just dunking in the nuoc mam, the rice paper is thick enough that it's unpleasant. Like eating shrimp wit the shell on.... if the shrimp had three shells. The rice paper is not just on the outside, but rolled up, so it winds up being three layers with each bite.
I tried dunking them first in hot water. That softened them up nicely, but it does dilute the flavor.
Any suggestions?
