Can I eat this lime meringue pie?

jeanbeank | Jul 24, 201709:02 AM

I made this recipe http://www.epicurious.com/recipes/foo... and used lime instead of lemon.

I know I should have waited 4 hours to let the pie cool however I cut into it after 2 hours late last night in order to get a photograph for a contest that was ending. Then I refrigerated the pie. The filling is not solid but is not runny; it is like a thick paste texture (see picture). Now it may not be like that if I cut into it today. The filling was boiling and very thick when I stopped cooking it on the stovetop.

But still....CAN I EAT THE PIE? In other words, is the filling cooked thoroughly? I don't want to get sick! I did see one of the comments for this pie a person remarked they liked the custard-like filling, so perhaps this is perfectly acceptable and edible?

Thank you.
