Here's what I cooked last night. Let's call it Faux mushroom/pepper/swiss chard pilaf/risotto.
First I put a cup of Lundberg brown rice on the stove with 1 1/4 cups water (no salt or cubes).
Then I sauteed finely chopped garlic, and yellow pepper strips. I added some shi take mushrooms. Then I added the rice that had cooked for fifteen minutes or so to the pan and some left over broth. Salt, pepper. Finally added swiss chard strips. Add cayenne. Yummy. Didn't time it but couldn't have been more than 40 minutes, probably less.
To clean: Two pots/pans, one cutting board, two knives, two bowls or so. Minimal clean up, great taste, healthy. Enough time to play with the baby after work and still have it ready by eight.
Please suggest similar real world dishes, fellow hounds. Vegetarian not a must.
