Easy, portable date dinner

Hi all,

A guy I'm seeing invited me over to see his new home. I'd like to offer to bring a meal over, and am trying to think of a recipe that fits all of these criteria:

1. Fast -- We're meeting on a weeknight so it needs to be done in an hour or less, because that's the time I have. (I can prep the night before if needed)

2. Easy -- I'm not much of a cook, honestly, so the more fool proof the better.

3. Low-key -- I know anything fast/easy is probably also low-key, but just to be clear: I've just started seeing this guy and don't want to look like I'm going to too much trouble. Fancy date-night fare is a little too much for where we are right now.

4. Portable -- I don't know how much kitchen stuff he has, or will have unpacked, so I need to be able to cook it at home, pack it up, drive 20 min, and have it be more or less ready to go from there.

Do you brilliant people have any thoughts about what I can make?

If it helps to know, I have an Instant Pot, so recipes like that are totally do-able. Also, I'm going to pick up some kind of blonde ale, I know he likes those.
