I am sure there are older threads on this subject, which I'll browse as well, but I'd like to hear your current suggestions for easy-to-prepare dinners that are compatible with calorie cutting.
My hubby and I try to eat whole foods but aren't opposed to the odd shortcut or prepared item to save time and effort. Ease of preparation is important as we both work full time in the home. We lean toward upping protein over carbs but are open to delicious ideas.
No menu restrictions, and we have a large spice and condiment collection and can access ingredients for most cuisines. I love ethnic and spicy foods. Good fish is a little tricky to find, but shrimp, catfish, trout, salmon, and cod are reliably available.
We have a standard stove and can pressure cook, sous vide, and slow cook (although I am not a big fan of results from the Crock Pot).
Sample meals that have worked in the past: Vietnamese slaw with poached chicken and nuoc cham, buffalo blue cheese slaw with chicken, veggie-heavy fajitas, crustless quiche, protein smoothies, scrambled tofu and eggs, sharitaki noodles with Chinese dressing, salads with protein, etc.
Please help me come up with new ideas!
