Following a tip on donrockwell.com, I checked out Dumpling Queen, a sister restaurant to the fabulous China Bistro in Rockville, aka Mama's Dumplings (because that's the translation of the Chinese name). The dumplings in Rockville are da bomb; big, juicy, bulbous wrappers surounding your choice of fresh herbs, vegetables and meats. Beef with celery, pork with dill, chicken and mushroom, fish with chives, are some of the great choices.
I chose the Lili's special dumplings which are pork and shrimp, and they did not disappoint. I think there has been some talk that maybe the wrappers in Chantilly are not as good considering it's a new operation, but I was impressed. I look forward to trying some of the more idiosyncratic combinations.
In addition to the dumplings, there are a variety of handmade noodles and some specials. From the 'chef's specials' menu I got the Xinjiang ribs which are fried in a batter and topped with a mountain of chopped peanuts, chilies, and fried spices. This was a very satsfying dish, maybe even the perfect example of just how different Chinese food is from Chinese-American. Some of the other specials look very good as well.
The Viriginia 'burbs finally have a really nice coterie of Chinese places to investigate.
