Hi - we received an Easter gift from D'Artagnan of a bunch of goodies and I've never cooked any of them before. I am slightly intimiated by them, not sure why, I love to cook but am not that "adventurous" I guess. So I have 2 duck confit legs, 2 magret (?) duck breasts, a quail and a few poussins. Also 2 chickens, but i can handle those. Any fail-safe ideas? Thanks!
