Duck fat - application

I made my first peking duck last week and I must admit mostly to render the duck fat to use in other dishes. I since then have gotten a store to order the fat so I don't have to go the duck routine anymore. I have used the fat in potatoes and last night on a pork chop. It does make a mess and burns quite fast. How do you use the fat (details please) and in what kinds of dishes do you use it.
