Duck dilemma

SLOLindsay | Nov 17, 2005 01:38 PM

My Thanksgiving menu was:

Plate of cheese and cured meats for nibbles, plus a dip and crackers
Arugula, endive and apple salad with gorgonzola
Roasted winter squash soup (trying a recipe tonight with gruyere toasts, I’m going to sub parmigiano)
---Ultimate Turkey from November BA---
Sweet cornbread
Green beans with wild mushrooms
Maple glazed sweet potatoes
Apple pie with whisky-soaked tart cherries (or possibly something from my bakery if I get overwhelmed, last year the chocolate torte was a hit even though it’s not traditional)

So now my picky husband says he doesn’t like turkey, and we’d be eating it for weeks, so could we do a duck? I don’t know what the difference is in cooking, but I said I’d try it.

I read that I should stuff it with spices and vegetables – onion, celery, carrot – and a quartered apple, and that I should prick the skin to make the skin crispy. Any other suggestions? Does this meal even work with duck, or do I need to find some other sides?

Thanks for your help! I have only made one Thanksgiving meal before (I’m 24). I hope this one is better than the last!
