I have a duck breast currently defrosting/airdrying in my refrigerator, and I'd love some suggestions on cooking/saucing. I know duck is usually served with fruit, but I'm not thrilled with the sweetness -- I might roast some parsnips with the duck to add a little sweetness, but I find most fruit sauces too cloying. The best duck breast I've ever had was in a mustardy winey sauce, but of course I can't find a recipe that even seems similar. I'd love ideas and favorite recipes. Thanks!
