May I suggest instead of paper towels for drying, use cheese cloth which is available at most grocery stores.

Cut the cheese cloth in half, which is 1 yard, wrap the beef in the cheese cloth, place it on a rack and put that in the bottom of the fridge. In 24 hours, remove the cheese cloth, and re-wrap with the remaining piece of cheese cloth.

Allow the beef to remain in the fridge for an additional 4 to 8 days.
