Please help with *dropping* places from my Paris list for end of this month

Been doing my homework, but now I need some help *eliminating* 2-3 restaurants from my list.

Context: We’re in Paris for 10 days and I think I should cut at least 1 or 2 of these out to leave some blank space, whether for wandering or to have a break from fine dining.
We were in Paris two summers ago for the first time in many years, and have only 2 places we loved so much that we plan to return to: Josephine Chez Dumonet and Spring. Can/will eat 2 “nice” meals each of the first couple days and the last day, but trying to mostly limit to 1 a day in between. Staying in the 6th, but don’t mind traveling for our sit down meals.

I’m a fairly adventurous eater other than much offal, and Indian spices. My wife’s not as adventurous, and so generally looking to limit no choices menus (forced choice ones are fine). She loves the French-by-Japense chef sensibility, and I’ve already gotten recommendation on those from this board included below. Generally shy away from Asian fusion types (e.g. Ze, Yam'Tcha) since we get plenty similar enough here in the SF Bay Area).

The wife’s not much of a wine drinker, so wine pairings and/or by the glass offerings a huge plus. Generally choosing the more expensive places at lunchtime. Looking for a mix of maybe 1/3 “classic”, 2/3 modern/inventive/creative. Currently thinking we’ll do one 3 star lunch, but not absolutely set on that.

With that, the current list (not in order):

Neige d'ete
Gare au Gorille [have reservation]
Le Cinq
L’Auberge du 15

Josephine Chez Dumonet ** [this one non-negotiable]
Spring *
Frenchie [have reservation]
David Toutain [have reservation]
Pierre Sang Boyer Oberkampf
Bistrot Paul Bert or Desnoyer (for steak frites)

Since we both love Riviera and Provencal food, and as somewhat of a change of pace, thinking about trying to add in GrandCouer based on JT’s recent review,

The existing reservations done online, and still plenty of time to cancel any of them in the next week if that’s the direction.

So I’m no longer looking for additions, but rather *subtractions*. We’re in Paris 9 full days. I think I need to delete 1 or 2 lunches, and 0 or 1 of the dinners. Which of the above are “not worth it”, or at least “less worth it”, especially in the context that we’ll be doing most of the others?
