Dreamy egg sandwich...

yesterday at The Adore - 13th btwn 5th and University.

I watched my sandwich being lovingly made - it contained:

1 egg, hardboiled, but with a creamy yoke, slicked thin, very cold

1 piece lettuce, *deeply* green in shade and very earthy-tasting, folded in half.

1/2 tomato, thinly sliced - tasted ripe (I know, even in March..)

a moderate amont of dijon, carfully spread to the edges

2 pieces homemade white bread, hand sliced - and this was the kicker - it was pillowy soft with a marvelously crunchy crust. it held up as sandwhich bread just fine, but just barely. (I think it was from Tom Cat Bakery??)

this was such a easy combination, but it reawakened me to the joys of simple egg sandwiches. no mayo clogging up the works, no harsh flavors... just perfect simplicity.

yum. i think i'm off to get another...
