Although I did not grow up in the South, I have tried many many versions of Red Velvet cake. My wedding cake was even Red Velvet! I've tried most of the ones around town...Auntie Em's, Sprinkles, Alcove, and many others.
After yet another visit to Doughboys this afternoon (they have a lovely artichoke sandwich, by the way!) I have decided that their version of a Red Velvet cupcake is the one to beat.
The reasons are many: It's very moist and has a good weight, but not a dry density. The cream cheese frosting is sweet and rich, but not too heavy. The layer of frosting is just thick enough for the size of the cake. One "cupcake" is plenty for two to share. The best part, though, is the flavor of the cake itself. It's sweet, but not too sweet. Tangy, but doesn't have that artificial food coloring tang so many other versions reek of. You can detect a very slight cocoa and vanilla flavor, but it still maintains that unique Red Velvet taste.
I think this is the one to beat...
