Double-smoked country ham

Several months ago, Saveur had a one-page item about a country ham purveyor in Kentucky that double-smokes its hams -- after the ham is cured in the smokehouse for several months (the traditional way), it gets another, more intense smoke treatment for 12 to 15 hours. I finally got around to ordering one, last week, and it really is the best country ham I've ever tasted.
