So... as I'm moving to the Domincan Republic for about a year on Sunday, Nab and I had to get one las meal in at Dok Bua. Neither of us were ravenous so we kept it simple and small (I was going as much for posterity as anything ellse). Had the common shrimp roll for an app and what has been my current favorite for a month or two, the crispy duck with chile sauce (more like chile gravy on the side).
We were going back and forth between a whole fish of some sort or the Soft Shelled Crab with House Sauce. Nab cast the vote for the crab.... Good thing he did. My lord this dish is phenominal. I have always found a fried or sauted soft shell to be one of the greatest tag teams of nature and chef can make but this was simply at another level. There were probably 3-4 nicely sized crabs chopped up and fried to perfection served with a simple thi curry influenced sauce. The whole was certainly greater than the sum of it's parts here. Soft shells are something I never considered needing more than just a bit of lemon or a smear of mayo-tartar on a sandwich but this was just the perfect compliment. Crispy, sweet, sour, spicy. Man, I'm gona miss that place!
