I was reminded of this most basic of my principles today when hungry for lunch with only 15 minutes til my next meeting, I was forced to procure a sammy from the wall street deli in my building and watched the employee weigh the meat and remove pieces before assembling. Anyplace that weighs meat portions to control costs is an enemy to the sammy breed. I'd rather eat Carl Budding on Wonder White. Shops that use already assembled meat packages, a la snubway and jimmy johns, are not far behind on my list.
