Welcome to October! This will be our reporting thread for our October dish of the month, kuku. A kuku is a Persian dish similar to an Italian frittata, but less egg-heavy. A common version is made with a mix of greens and herbs, but variations exist with just about every vegetable imaginable (eggplant, squash, cauliflower...), and yes, meat versions exist as well. All of these variations are fair game for this month. Because of the similarity to a frittata, I am requesting that you stick to the Persian dish, and not make an Italian frittata (there are differences in the quantity of egg used and in the seasonings). Frittata could very well be a DOTM in its own right in the future, so it is best not to include it here.
