Disappointment at the Biltmore

Went to the Biltmore last night for the first time since the changeover in chef etc. We had been at least a half dozen times before and always liked it and were wary about what the changes might be, but I was totally craving the "crazy delicious pub fries" [aka poutine], so we decided to take the chance. We arrived around 9:15, not wanting to wait, and it was still very full, with only one or two empty tables, so they are clearly still doing pretty well [although when we left around 10:30 the bar was empty and only a couple tables on that side were taken, so not sure what that says]. Anyway, we ordered the fries as our appetizer. What showed up, however, is not what it the dish used to be [thin frites, lots of chunks of cheese curd/white cheese, awesome gravy]. They are now made with waffle fries and what appeared to be melted cheddar, with a few tiny bits of some white cheese. And oh, that gravy is not at all the same. It was that thick goopy kind that looks like it came out of a jar [and maybe it did]. Nothing like the flavor it used to have. They were decent cheese fries, but that's it. I was seriously bummed, because that was the main reason we even went. For mains, I ordered the steak frites from the specials board, and my DC ordered the crab cakes, also a special. They were out of her first choice, the mussels. I asked if I could have something instead of frites b/c of our app, and she said sure, so I ordered the 'french beans'. Our meals arrive, and I have a steak covered with some lumpy white sauce, and mashed potatoes. I mentioned that I had asked for the beans, and asked what was in the sauce....blue cheese. Well, I hate blue cheese. As do a number of people, I think...wouldn't you put that on the listing? Or tell people when they order it? Because last time I checked, I don't think that's traditional or anything. So they took it back and made me a new steak. When it finally came, it was actually very good, and a good deal for $16, but it's a pain to eat at a different time from your DC. The beans were just regular green beans, no butter, no seasoning, and VERY crunchy. The crabcakes were apparently decent, if not outstanding. The service was fairly indifferent, not horrible, not great. We missed our quirky waitress from previous visits. So, I doubt we'll be back. I hope that the old staff opens a new place soon, and that someone will post that info when it's available.
