Made big batch of meatballs (in sauce) a few days ago. I consider it a "dump" recipe... NO measuring done. Ground meats, bread crumbs, egg, minced onion (actually in form of a few spoons of dried onion soup mix). Browned in skillet and then slow simmer in sauce on stove top. I tasted one after browned & before plopped into sauce... taste/texture as expected. Tasted at some point during simmering process... same.
This is one of those recipes that you just can't cook for one or even one meal. Knew/planned for left-overs. Gave container a 5-6 minute spin in microwave to make sure contents of jars would be HOT before going into pressure canner. MOST of the meatballs had totally crumbled?? Still tasty but now meat SAUCE??
Any idea why this might have happened??
