Three dinners in Napa Valley?

We will be spending 3 days in the Napa Valley next month, staying in Yountville. We have been many times before, and among our favorites have been Redd, Bistro Jeanty, Press and the Martini House (unfortunately, now gone). Because one of us is a rather picky eater (definitely not me...I eat everything!) places like Ad Hoc are out. Also, although cost is not a major consideration, we don't want the splurge of the French Laundry (especially for our picky one). Important are atmosphere (we don't like overly noisy restaurants...this has been a problem at Jeanty), terrific food and service, good wine list, and if possible, a full bar (we enjoy a cocktail before dinner). All cuisines are ok, but prefer American/regional cuisine, seafood, steak, etc. What would be your top 3 picks, between Napa and St. Helena?

Lunch recommendations are also welcome. In the past, we've enjoyed Mustard's, Go Fish and Brix.
