I'm having a friend and his girlfriend and her 4 y/o for dinner on Saturday. My husband and his 12 y/o will also be there. The 12 y/o loves to make and eat mussels and our guests have said they like them as well, so we'll start with that. But I'm wondering about a main course. I'd like something light like a white fish en papillotte with a corn and tomato salad. My husband is thinking some sort of encrusted pork loin over wilted greens with some sort of starch. I think the corn and tomato salad would be ok with that, too. First, I don't have a recipe for the salad and/or an encrusted pork tenderloin (no cilantro pls), and second, do you have any suggestions for a main and appetizers other than cheese and crackers and nuts. I'm going to have the 4 y/o and 12 y/o help make a very simple tiny pizza (basically I'm going to let them top it with sauce and cheese etc.) for the apps, too, so maybe that's enough.
