I am having my in-laws over for dinner for the first time in a couple weeks and am planning my menu. So far I have:
-Homemade hummus and pita with celery, carrots, & radish
-Roast Chicken rubbed with a lemon-oregano pesto of sorts
-garden potato salad that includes: new potatoes (or fingerlings), asparagus, snap peas, regular peas, sliced fennel, with a dressing of basil, mint and lemon
I was going to do a Greek salad too (tomatoes, cukes, kalamatas, feta) but I feel like there are already plenty of vegetables in the potato salad...what do you think? Is it necessary? Or am I missing something else?
For dessert I am thinking a S'mores brownie pie. Graham cracker crust, homemade brownie and topped with marshmallows. Doesn't really fit the rest of the menu but it is fun and delicious and I always need something chocolate-y in my life!
