One dinner, seven months of planning.

Hi all --

I'll be in LV for two nights at the end of two weeks of hiking and camping in the UT/NV/AZ area the second week of July, 2015. Naturally I'll be paying attention to any interesting openings, but with an all-inclusive budget of, say, $450 per person, what would strike your fancy right now? Lately I've been interested in craft cocktail bars, house charcuterie, and molecular gastronomy. I was thinking about e, but I've seen less-than-glowing reviews lately that make me wonder about the actual food quality (feel free to disagree). Chef's tables, kitchen tables, on or off-strip, I'm open to whatever! Thanks in advance for your input.
