dinner menu for inlaws -- challenge

I need to put together a dinner menu for my inlaws. The thing is, they have a lot of eating restrictions. Also, we will be going out during the day so I want to make things that for the most part can be prepared ahead.

The restrictions: no fish, shellfish is ok, no red meat, no onions or mushrooms (!?!, I think I can sneak these in, it isn't an allergy and I think it is fine if MIL just doesn't see them), no dark meat chicken.

Specific requests: something with artichokes

I saw a recipe for artichoke blue cheese bisque that looked great.

I was also thinking of doing lobster meat with pea sauce as an appetizer.

I was thinking of coq au vin for the entree...I'll eat the dark meat and give them the breasts :)

Any ideas?
