I need some help with dinner. Every Tuesday is family dinner night and my family has a ton of restrictions. My father-in-law is on the Atkins diet, so no carbs (including rice, sweet potato, limited amounts of legumes and nuts, etc.). My mother-in-law doesn't like spicy food and is allergic to peppers. And my sister-in-law doesn't eat dairy, gluten, refined sugar, or nightshades (potato, eggplant, tomato, peppers). Most nights we end up eating steak or chicken and green salad, which is getting old in my opinion. Does anyone hasve any creative ideas??
