So in the end I took one poster's suggestion and made a frittata. It was a southwestern frittata with roasted peppers, onions, chopped up grilled chicken breast, and pepper jack cheese. I served balsmic red onions and grilled zucchinis and corn bread as sides.
I used leftover frozen turkey stock and made a chicken tangy tortilla soup as starters.
Everything was yummy and quite healthy and easy to make ahead.
