Make Ahead Dinner -- Dairy Free

My in-laws are babysitting for my kids on Sunday afternoon/evening and I want to leave something for everyone to eat for dinner. Normally when they babysit, I get some roast chickens, but I feel like everyone is sick of roast chicken. The other thing is that I can't make a lasagna or baked ziti or something like that, because my son is on a dairy-free diet for a little while. So I'm at a loss.

I keep thinking about a turkey meatloaf or some kind of meatballs, but these ideas are not striking my fancy.

Does anyone have any ideas for anything with the following criteria: a) I can make on Saturday or Sunday and my MIL can just heat up, b) dairy free, c) as a bonus, something I can make a large batch of and freeze a portion.
