Dinner for the boss/friend/role model

Hi all. I have a very difficult request, which is why I am hoping you can help. It is my boss's (who I also consider a friend and great role model) birthday and I'd like to take her out to a special dinner. Her birthday is Monday, but I will most likely take her out on Thursday evening after her birthday.

The difficulty comes in that she has been to just about every restaurant there is to go to - Fleur De Sel, Per Se, Bouley, Gramercy Tavern, EMP, Babbo, Luca, etc. I won't name them all, but seriously, I can't find one she hasn't yet been to.

As such, knowing that I don't want to take her somewhere she has already been (Which is all the places that frequently get rave reviews on this board) I'd really like to take her to a hidden gem.

The other thing is that she is health conscious so definitely need fish options on the menu. She also loves Pinot Noir. And prefers quieter settings as opposed to loud groupie ones. Lastly, this is someone who prefers the finer things in life, so price is not a constraint. I'm a foodie as well, so don't mind breaking the bank a bit for one great dinner.

I hope this isnt too much to ask - but I figured you all might be able to offer some thoughts...as I'm totally confounded.
