What did you make for dinner?

Just for fun...share what you made for dinner last night.

Did anyone else improvise?? I had nearly 3/4# of cooked, crumbled bacon to use up after frying it up to help season my new cast-iron skillet. :) Looked at it all and pondered what to do with it (aside from pick at it, which was soon becoming a problem...yum...) Then I remembered the whole wheat pie crusts in the freezer I hadn't tried yet...and so I made a quiche:

Pre-bake the crust a bit.
Layer most of the bacon in the crust
Saute onion and chopped spinach, layer over bacon
Whisk together eggs, cream, fat-free-half-and-half (kind of dumb, I know)
Add to the liquid some grated Gruyere and Colby/Jack cheeses
Pour into crust.
Top with remaining bacon
Bake until done.

Friends came over to do a trial run of truffle making (more on that soon) and we ate up the quiche -- it was delish!!!! -- the crust was really tasty, flakier than I thought it would be, and buttery. (Not sure the health benefits of the whole wheat cancelled out all the butter...but oh well...)Also had the asparagus that I bought on sale for 99 cents a pound (!!) and a salad with homemade vinaigrette.

Fun to improvise at the last minute.
