Yesterday I finally had an electrician come by the house to install a new extractor fan/cooker hood in our kitchen. It's a Neff, which I'd bought primarily after reading a very positive review in Which? Magazine (UK equivalent of Consumer Reports). After having used it to cook both last night's dinner and breakfast this morning, I can safely say it will encourage me to cook more ambitious dishes more often, since I won't have to worry as much about clean-up afterwards. It also kept me cooler while cooking, which was an added unexpected benefit. Oh, and it's so much quieter that I can actually carry on normal conversations without raising my voice.
For a long time I'd not given a lot of thought to whether extractor fans make much difference in a kitchen. Certainly I'd understood that for those with gas cooktops (particularly those in professional settings with high-powered burners) they're significantly more important, since hoods have to pull not only steam and airborne grease but also the combustion by-products. For induction and electric they're somewhat less important, but the model that had been installed in our kitchen originally was clearly not up to the task. In hindsight I'd wager the previous model (an Amica) wasn't capable of managing even half of the recommended extraction rate, which meant that I ended up getting grease-laden steam all over the cabinets and walls of the kitchen nearest the cooktop.
This new Neff (model #D64AFM1N0B) extracts about 400 m^3/hour at its normal setting (2), and 615 m^3/hour at its boost setting. Following the calculation suggested by a lot of installers that an extractor fan should be capable of exchanging the air in the kitchen 10 times per hour, I estimated the volume of my kitchen at 52 m^3, which means that mine ideally should run at about 520 m^3/hour to meet this guideline. And last night and this morning that's exactly what I did. And it was truly amazing to have nearly all of the hot gases/grease pulled *away* from one's face and out of the kitchen without getting on any nearby surfaces!
