I'd like to purchase one of the DeBuyer country pans. They seem to be offered in the blue steel and mineral b lines. I understand that the "b" pans come with a wax coating that needs to be stripped off before seasoning the pan. This actually sounds like more hassle and so a disadvantage. Both lines appear to be the same thickness. Yet the "b" pans are almost twice the price of the others (I'm looking at finestcookware). What am I missing?
