Dieting in Manhattan - another good HK experience

I had a great experience at HK recently - when I asked for no rice w/my meal, they without question or warning served me my skate wing (good and fleshy) on a generous bunch of field greens and balsamic vinaigrette. I had thought I was getting asparagus too, and when I asked about it, the waitress explained that the asparagus usually was *in* the rice. "but, no problem," she said, and brought me a side of asparagus. Anyone else have experiences with restaurants easily accomodating/ going beyond the basics for weird requests? So far, I've been pleasantly surprised.
