Desperately seeking gordita help

I'm cooking for a crowd of 75 at a charity event next month. One of my menu items is gorditas topped with various Mexican items. Problem is, I've never made gorditas. The gorditas I'm thinking of are a 4" diameter by 3/8" thick pancake of cornmeal or masa and potato, common in northern Mexico. Any recipes or ideas?
