Many thanks to whomever recommended their fried zucchini with skordalia a while back here on the board. Finally had a chance to try it and it was yummy. Skordalia distinctly garlicky but not overly and had a nice relatively light texture, given that it's potato based. I've had it where you hope the table can hold up. Zucchini cut into thin planks, dipped into a very light batter that was crisp fried. Served piping hot and there was a perfect proportion of skordalia to zucchini. Yum.
